We are a family-run farm that has been operating for decades right in the heart of the Val d’Orcia, the pride of the whole of Tuscany, where large green spaces still triumph, drawn by cultivated fields, meadows and woods.

Lot of happenings have passed over time, but one concept has remained the same and deeply rooted in our consciences: respect for the nature and for what we produce.

To contribute to the protection of the biodiversity of our territory, our company participates in the “Ancient Grains of the Val d’Orcia” chain with the production of Verna soft wheat, from which we obtain our stone-ground flour.

Flour

Verna ancient wheat is a rustic and resistant plant. It is a soft wheat, originally from Tuscany, with high digestibility and intense flavor, with a low presence of gluten. This variety, whose cultivation was abandoned for many years because it was less productive, was rediscovered in the 2000s. From the stone grinding of Verna wheat a very fragrant flour is obtained, with a particular taste and exceptional properties.

We work with two different types of grinding: type 1, more versatile and suitable for the preparation of leavened pastries, sweets and baked goods, and type 2, more suitable for bread-making. We have 1 kg packs available.
