Fennel Foeniculum vulgare is a herbaceous species with yellow flowers gathered like an umbrella on the top of the stem. It prefers mild climates, even if it tolerates the cold. The name derives from the Latin foenum, hay, due to the similarity of the aroma and the fineness of the leaves.
On the estate, the wild fennel plant produces very fragrant flowers, from which very small greyish-green fruits are born. The edible parts of this plant, widely used in cooking, are the leaves, flowers and fruits.

Wild Fannel
Product with an intense aroma, to be used in the kitchen to flavor meats and dishes in general or to prepare infusions to be enjoyed hot or cold.
In our plot we cultivate the Dulce variety, with an aroma more similar to anise. The harvest takes place by hand in late summer. After drying, the flowers are ground and packaged.
